I love fish. Seriously, I’m not sure I’ve ever met one I didn’t like. Mild, rich, flaky, even a little fishy—I’m pretty much an equal-opportunity seafood eater.

Halibut, though, is one of my favorites when I want dinner to feel a little more special. It’s mild enough to play nicely with just about anything, but sturdy enough to handle a topping with some serious personality. And you know me, I wasn’t about to leave a perfectly good piece of halibut sitting there naked with a little salt and pepper. Where’s the fun in that?

I wanted something creamy, savory, garlicky, and just a little indulgent. Parmesan and garlic were obvious places to start, but that wasn’t quite enough. Cream cheese joined the party for richness, finely chopped shallot added a little something in the background, and lemon brought the brightness that fish practically begs for.

Then I spotted the artichoke hearts.

Now we were getting somewhere.

I chopped them up and folded them into the Parmesan mixture, along with a little crushed red pepper because apparently, I’m incapable of leaving well enough alone. The whole thing gets spread generously over the halibut after it has had a short head start in the oven, then goes under the broiler until the topping is warm, creamy, and lightly golden.

And that first bite? Exactly what I was hoping for. The halibut stays tender and flaky underneath, while the topping is rich and savory with little bites of artichoke, plenty of garlic, salty Parmesan, and just enough lemon and heat to keep everything from feeling too heavy.

It tastes much more complicated than it actually is—which is one of my favorite kinds of kitchen trickery.

This Parmesan Artichoke Halibut is absolutely easy enough for a weeknight, but it has that little “look what I made!” quality that makes it worthy of company too. Add a vegetable and maybe a glass of wine, and suddenly Tuesday night is feeling considerably more interesting.

And really, isn’t that the whole point? Dinner doesn’t need to be difficult to deserve an encore.

Look for two 5–6 ounce halibut fillets that are fairly even in thickness, ideally around 1 inch thick. Similar-sized fillets will cook more evenly and are much easier to find than one large piece of halibut.

Pat the halibut thoroughly dry with paper towels before adding the lemon juice and seasonings. Removing excess surface moisture helps the fish cook evenly and gives the creamy topping a better surface to cling to.

Before switching the oven to broil, position the rack about 5–6 inches below the broiler. That little move makes a big difference when you're trying to get the Parmesan-artichoke topping lightly golden without overcooking the fish.

Halibut fillets vary in thickness, so begin checking them after about 6 minutes. The fish should be opaque and flake easily when finished and remember that it will continue cooking during its final few minutes under the broiler.

A crisp Sauvignon Blanc is a great match for the lemon and artichoke while cutting through the creamy Parmesan topping. Try Duckhorn Sauvignon Blanc or Sancerre Champteloup. If you prefer something a little rounder and richer, Gainey Chardonnay is another great choice. For a cocktail, a classic gin and tonic with a squeeze of fresh lemon keeps things bright and refreshing.

Description
