So, I went a little overboard with the grilling this year because…why not? Once that grill was fired up, apparently I decided nothing in the kitchen was safe.
Steak? Of course. Chicken? No-brainer. Corn? Yes, please. Pork chops? Absolutely. But then I started looking around wondering what else I could throw on there. And somehow, my eyes landed on the pineapple.
I mean, why not?
I love sweet, juicy pineapple all on its own, but grilling it takes things in a completely different direction. The natural sugars start to caramelize, you get those gorgeous little charred edges, and suddenly plain old pineapple is walking around like it got a promotion.
Now, I know for a fact that plenty of people have been grilling pineapple for years. It’s not like I had some groundbreaking culinary epiphany here. Apparently, I was just a little late to the party. Why the heck has it taken me this long? I really don’t have a good answer for that beyond: at least I finally showed up!
But once I decided the pineapple was going on the grill, I needed a plan. Because grilled pineapple by itself sounded delicious, but what was the end goal? Surely I wasn’t just going to stand over the grill eating warm pineapple straight off the grates.
Okay, I could do that. But that wasn’t much of a recipe.
