More About Me

Inspirations

Who hasn’t had meatloaf at some point in their life?

Well, let me clarify. When I say meatloaf, I mean traditional meatloaf. The kind your mom used to make with ground beef, onions, and some form of ketchup sauce spread across the top. Sometimes it was shaped by hand, sometimes it was stuffed into a loaf pan. In the end, does it really matter? I say no. Aesthetics aren't nearly as important as flavor—at least when it comes to meatloaf.

Even a slightly misshapen meatloaf tastes pretty darn good to me. Serve it with a pile of mashed potatoes or tuck the leftovers into a sandwich the next day, and you have a winner.

Over the years, I’ve tried some of those meatloaves that sneak vegetables into the mix in an attempt to make them healthier. A little carrot here, some celery there...but honestly, I never felt like I deserved a pat on the back for eating my vegetables afterward. And then there are the recipes that call for three different kinds of meat. At that point, my grocery bill is going up, my meatloaf is getting enormous, and I’m not convinced we’ve actually accomplished anything.

So, I wanted to make a meatloaf that still felt like home but was a little more sophisticated—and a lot more fun to serve.

First, I decided not to use just any ground meat. I went rogue and used ground chicken. I mean, why not? If I was going off the grid, I might as well keep going.

Still, I wanted to keep things easy and limit the mess wherever I could. Although I love fresh breadcrumbs, this seemed like the perfect job for my good friend Panko. Add a little milk and an egg, and you have all the binding power you need without hauling out another appliance or pulverizing perfectly good bread.

And, lest anyone think I have something against vegetables, I kept the onion and invited chives and parsley along for the ride. Look at that—three vegetables! Okay, two herbs and an onion, but let’s not get technical. I’m not trying to turn meatloaf into a health food.

Then came the Parmesan. Because if ground chicken, garlic, herbs, and Parmesan are all hanging out together, we're already headed somewhere good.

But wait! A proper meatloaf needs a topping. And there was absolutely no way I was putting ketchup on this one. These little loaves needed something with more of a “hey, I’m kind of fancy” attitude. Something simple, but just sophisticated enough to make you forget we're still talking about meatloaf.

Butter. Garlic. Parmesan.

Boom.

And perhaps my favorite part? There’s no loaf pan involved. Just divide the mixture into four portions, shape them into little individual loaves, and into the oven they go. Then, during the last few minutes of baking, brush them with that buttery garlic Parmesan topping until everything is golden and delicious. Everyone gets their own little meatloaf—with no fighting over the end pieces.

I served mine with creamy Gruyère & Chive Mashed Potatoes, which turned out to be exactly the kind of side these deserved. Comfort food? Absolutely. Your mom’s meatloaf? Not exactly.

And I think Mom would be okay with that.

Pro Tips and Riffs

Ground chicken can get dense if you mix it too aggressively. Use your hands and mix just until everything is evenly combined.

Ground chicken is sticky—there’s really no getting around it. Divide the mixture into four portions and refrigerate for 15–20 minutes before shaping. It will be much easier to handle.

Freshly grated Parmesan melts better and gives the topping a much better finish than the pre-shredded variety.

The final minute or two under the broiler gives the Parmesan topping its gorgeous golden finish, but it can go from golden to burned in a hurry. Stay close.

Parsley and chives keep these fresh and savory, but thyme or a little fresh rosemary would also work if that’s what you have on hand.

A bottle of Decoy Sauvignon Blanc is a great match for these Garlic Parmesan Chicken Meatloaves. Its bright citrus and crisp acidity balance the buttery Parmesan topping and complement the garlic and fresh herbs. Prefer Chardonnay? Rombauer Chardonnay brings a richer, creamier pairing that plays especially well with the Parmesan and mashed potatoes. For a red, La Crema Pinot Noir is light enough for the chicken while still bringing plenty of flavor.

Faq: Grub Answers and Insights

A: Absolutely. Prepare the chicken mixture, divide it into four portions, cover tightly, and refrigerate for up to 24 hours. When you’re ready to cook, shape the chilled portions into individual meatloaves and continue with the recipe. You can also freeze the uncooked portions. Wrap each one tightly and freeze in an airtight container or freezer bag for up to 3 months. Thaw overnight in the refrigerator before shaping and baking as directed.

A: Ground chicken is naturally soft and sticky. A short chill firms it up enough to make shaping the individual meatloaves much easier.

A: You can, but the cooking time will need to be increased considerably. For this recipe, the individual size is part of the appeal—they cook faster and everyone gets plenty of that golden Parmesan topping.

A: Yes. Ground turkey should work well as a substitute, though the flavor and texture may differ slightly depending on the fat content.

Description

These Garlic Parmesan Chicken Meatloaves are tender, juicy, and packed with savory flavor, then finished with a buttery garlic-Parmesan topping that turns golden under the broiler. Made as four individual meatloaves, they’re a lighter spin on classic comfort food with plenty of cheesy goodness in every bite.

Ingredients

Scale

Chicken Meatloaves

1 lb ground chicken

⅓ cup panko breadcrumbs

2 Tbsp milk

¼ cup finely diced sweet yellow onion

2 garlic cloves, pressed

1 large egg

½ cup freshly grated Parmesan cheese

1 Tbsp fresh parsley, minced

1 Tbsp fresh chives, minced

1 ½ tsp Dijon mustard

1 tsp Worcestershire sauce

½ tsp kosher salt

¼ tsp freshly cracked black pepper

½ tsp Italian seasoning

Garlic Parmesan Topping

1 ½ Tbsp unsalted butter, melted

1 garlic clove, pressed

¼ cup freshly grated Parmesan cheese, divided

Fresh parsley or chives, for garnish

Instructions

  1. Preheat the oven to 375°F. Line a baking sheet with parchment paper.
  2. Combine the panko breadcrumbs and milk in a small bowl. Let sit for 2–3 minutes to allow the panko to absorb the milk.
  3. Add the ground chicken, onion, garlic, egg, Parmesan, parsley, chives, Dijon mustard, Worcestershire sauce, salt, pepper, Italian seasoning, and panko mixture to a large mixing bowl.
  4. Using clean hands, gently mix the ingredients just until evenly combined, being careful not to overwork the chicken.
  5. Divide the mixture into 4 equal portions. Place the portions on a parchment-lined plate or baking sheet and refrigerate for 15–20 minutes, or until the mixture is firm enough to handle.
  6. Remove from the refrigerator and, using your hands, gently shape each portion into a small oval meatloaf. Arrange the meatloaves on the prepared baking sheet, leaving space between them.
  7. Bake for 18–20 minutes.
  8. While the meatloaves bake, combine the melted butter, garlic, Dijon mustard, and 2 tablespoons of the Parmesan in a small bowl.
  9. Remove the meatloaves from the oven and brush generously with the garlic-Parmesan mixture. Sprinkle with the remaining Parmesan.
  10. Return to the oven and bake for another 5–8 minutes, or until the internal temperature reaches 165°F.
  11. Turn the broiler to high and broil for 1–2 minutes, watching closely, until the Parmesan topping is melted and lightly golden.
  12. Remove from the oven and let the meatloaves rest for 5 minutes before serving.
  13. Garnish with fresh parsley or chives.

Notes

The chicken mixture will be quite sticky before chilling. Divide it into four portions, refrigerate for 15–20 minutes, then shape the individual meatloaves.

Mix the chicken gently by hand just until the ingredients are incorporated. Overmixing can make the finished meatloaves dense.

For the best flavor and melt, use freshly grated Parmesan rather than pre-shredded cheese.

Because ground chicken can vary in moisture and thickness, use an instant-read thermometer rather than relying solely on baking time. The center of each meatloaf should reach 165°F.

Watch the meatloaves closely during the final broil. You only need enough time to melt the Parmesan and give the tops a lightly golden finish.

Store leftover Garlic Parmesan Chicken Meatloaves in an airtight container in the refrigerator for up to 3–4 days. Reheat gently in the microwave or in a 325°F oven until heated through.

Cooked meatloaves can also be frozen for up to 3 months. Let them cool completely, wrap individually, and place in an airtight, freezer-safe container or freezer bag. Thaw overnight in the refrigerator before reheating.
