Oops...I did it again.

First it was the viral dumplings. Now I've officially hopped on the Crispy Smashed Beef Taco train.

Honestly, I tried to resist. I really did. But when every other scroll on social media is another version of smash tacos, curiosity eventually wins. Beef, chicken, breakfast, gyros, veggie...apparently if it fits on a tortilla, someone has smashed it.

Of course, smash burgers have been around forever. Places like Smashburger, Shake Shack, and Sonic have built entire menus around crispy-edged burgers. So naturally, someone looked at a taco and thought, "You know what this needs? More crunch." Turns out...they weren't wrong.

The first thing I noticed was there isn't just one way to make smash tacos. Some cooks drop a ball of seasoned beef onto a hot griddle, smash it paper thin, then add the tortilla later. Others press the seasoned beef directly onto the tortilla first and cook them together from the start.

Since this was my first attempt, I wasn't trying to reinvent taco night. I stuck with something I already knew worked: ground beef seasoned with my favorite homemade taco blend. It's everything you'd expect in a classic taco seasoning—chili powder, cumin, paprika, garlic powder, salt, and pepper—but I swap onion powder for dried minced onion because I love the little bits of texture it adds.

Instead of browning the beef first, I mixed the seasoning directly into the meat, divided it into four equal portions (yes...I grabbed my kitchen scale because uneven tacos bother me more than they probably should), and spread each portion into a thin layer on a fresh tortilla.

Speaking of tortillas...fresh tortillas are non-negotiable in my kitchen these days. No, I don't make them from scratch. Let's not get carried away. But the fresh ones from the grocery store make a huge difference. One thing I learned quickly: spread the meat almost to the edge, but leave about a half-inch border because the beef shrinks as it cooks.

The moment the beef started sizzling against the griddle while the tortilla crisped underneath, I knew this recipe was going to be a keeper. Then came the flip. The cheese melted into every crispy nook and cranny while the tortilla turned beautifully golden. Waiting those last couple of minutes felt like torture.

Pile on shredded lettuce, salsa, and a generous drizzle of my Avocado Cilantro Lime Sauce, fold it in half, and prepare yourself.

Sprinkle the cheese on immediately after flipping the tacos so it melts perfectly before serving.

These tacos are best enjoyed fresh while the tortillas are hot and crispy. If you have leftovers, refrigerate them in an airtight container for up to 3 days. Reheat in a dry skillet or air fryer until the tortilla crisps up again. Avoid the microwave if possible, as it will soften the tortilla.

1 pound 85/15 ground beef

1 tablespoon chili powder

1 teaspoon ground cumin

1 teaspoon paprika

1 teaspoon dried minced onion

½ teaspoon garlic powder

½ teaspoon kosher salt

¼ teaspoon black pepper

For the Tacos

4 Fresh Soft Taco Tortillas

1 cup shredded Mexican cheese blend

1 cup shredded lettuce

½ cup salsa


Instructions

  1. Add ground beef, chili powder, cumin, paprika, dried minced onion, garlic powder, salt, and pepper to a bowl. Mix until the seasonings are evenly distributed.
  2. Divide the beef mixture into 4 equal portions.
  3. Press one portion of beef into a thin, even layer covering one side of each tortilla.
  4. Preheat a flat-top griddle or large skillet over medium-high heat.
  5. Place the tortillas meat-side down onto the hot cooking surface.
  6. Cook for 4–5 minutes, or until the beef develops a deep brown crust and is cooked through.
  7. Flip the tacos so the tortilla side is down.
  8. Immediately sprinkle about ¼ cup shredded Mexican cheese over each taco.
  9. Continue cooking for 1–2 minutes, or until the tortilla is lightly crisp and the cheese has melted.
  10. Fold each taco in half and transfer to a serving platter.
  11. Fill with shredded lettuce, salsa, and a generous drizzle of Avocado Cilantro Lime Crema.
  12. Serve immediately.

Use an instant-read thermometer if desired. Ground beef should reach 160°F.
