IHow did these cookies come to be? One word...inspiration!
We were getting ready to celebrate one of my friend's 60th birthday, and thanks to a spreadsheet we all keep (yes, we have a spreadsheet...don't judge), I knew one of her favorite desserts was White Chocolate Raspberry Bundt Cake. There was just one tiny problem...I had never eaten one. Oh, and I had never made a bundt cake either. Minor details.
Naturally, I considered making one. Then reality set in.
Buying a bundt pan for one recipe seemed like the culinary equivalent of buying a kayak because you went canoeing once. I knew exactly what would happen. I'd use it once, pat myself on the back, and then spend the next ten years moving it around the cabinet every time I needed my roasting pan. Hard pass.
So my brain went where it always seems to go...

Brown butter has never let me down, so it earned a starring role. White chocolate isn't usually my first choice, but after falling in love with chocolate disks in my Brown Butter Toffee & Dark Chocolate Chunk Cookies, I knew white chocolate disks would create those same irresistible melty pockets.
Then I hit the raspberry roadblock.
Fresh raspberries sounded great...until I pictured them turning into pink mush while mixing the dough. Thankfully, the internet came to my rescue with freeze-dried raspberries. - Add the butter to a light-colored saucepan over medium heat. Cook, stirring frequently, until the butter foams, the milk solids turn golden brown, and it smells nutty, about 5 to 8 minutes. Pour into a large mixing bowl and let cool until just slightly warm, about 25 to 30 minutes.
- Preheat the oven to 350°F (175°C). Line two baking sheets with parchment paper.
- Whisk together the flour, baking soda, and kosher salt in a medium bowl.
