If you have read my recipe for High-Protein Egg Bites, you already understand my ongoing quest for a quick, protein-packed breakfast that will get me through my morning workouts without weighing me down. I love those egg bites, but even a favorite song gets a little old when you play it every single morning. I needed to mix up the breakfast rotation.

Now, I love oatmeal, but I wanted something a little different from the version we grew up eating. Don’t get me wrong—we loved that oatmeal! It was served piping hot with butter, lots of brown sugar, a little milk, and a piece of white toast absolutely slathered in more butter. You have to admit, even if you don’t like oatmeal, that sounds pretty darn good, doesn’t it?

Fast-forward a LOT of years, and it was time to give that youthful oatmeal a bit of an update. Oatmeal is good for your heart, right? So, I figured there had to be a way to bring back some of those cozy breakfast memories without recreating the full calorie-bomb experience. Sadly, my metabolism no longer responds to butter and brown sugar with the carefree enthusiasm it once did.

Baked oatmeal seemed like the perfect answer. It could be made ahead, sliced into individual portions, and reheated quickly before a workout. More importantly, I wanted it to taste like an actual breakfast—not one of those suspiciously wholesome creations that requires a flood of maple syrup just to make it go down.

Of course, getting there took a few tries. I didn’t want it overly sweet, but it still needed enough sweetness that you weren’t tempted to drown it in maple syrup. The banana, blueberries, and vanilla Greek yogurt helped create that balance, while the lemon added a bright little high note and the toasted coconut brought in a subtle nuttiness. Suddenly, oatmeal had a whole new groove.

Then came the banana incident.

During one test, I had some extra banana sitting around and thought, “Why not throw it in?” It was banana baked oatmeal, after all. What could possibly go wrong? Well, quite a bit, apparently. When I tried to cut the oatmeal, it was so mushy that I had to put it back in the oven. Then I took it out, tried again, and put it back in the oven a second time. At that point, breakfast had become a hostage negotiation.

Lesson learned: measurements sometimes matter—a lot! More banana does not automatically mean more delicious banana flavor. Sometimes it just means you will be standing in front of the oven wondering why your breakfast refuses to become solid.

Once I stopped improvising with the banana, everything finally fell into place. Description

Ingredients

2 large very ripe bananas, mashed (about 1 cup)

3 large eggs

1 ⅔ cups milk (dairy or unsweetened almond milk)

½ cup vanilla, high-protein Greek yogurt

1 teaspoon vanilla extract

3 tablespoons maple syrup or honey

1 tablespoon melted butter

1 - 2 teaspoons lemon juice

1 tablespoon brown sugar

2 cups old-fashioned rolled oats

1 teaspoon baking powder

1 teaspoon ground cinnamon

½ teaspoon kosher salt

Zest of 1 lemon

1 ½ cup fresh or frozen blueberries

⅓ cup unsweetened shredded or flaked coconut

2 tablespoons chia seeds


Instructions

  1. Preheat oven to 350° / 175°C and lightly grease an 8x8" baking dish.
  2. Place the coconut in a dry skillet over medium-low heat and cook for 3 to 5 minutes, stirring frequently, until lightly golden and fragrant. Remove from heat and let cool.
  3. In a large bowl, mash the bananas until mostly smooth.
  4. Add the eggs, milk, Greek yogurt, vanilla extract, maple syrup, melted butter, lemon juice, and brown sugar, and whisk until well combined.
  5. In a separate bowl, combine the oats, baking powder, cinnamon, salt, and lemon zest.
  6. Add the dry ingredients to the wet ingredients and stir until fully incorporated.
  7. Lightly mash ¼ cup of the blueberries.
  8. Gently fold in the blueberries, coconut, and chia seeds.
