Inspirations

By now, my love of ahi tuna has been pretty well documented. So, rather than subject you to another lengthy explanation of just how much I love it, let’s talk about the real obstacle standing between me and eating more of it at home.

His name is Gary.

Gary is not an ahi tuna fan. He’ll take an occasional bite of Poké, but that’s about as far as he’s willing to venture. This presents a bit of a problem because when I cook dinner, I’m usually cooking for both of us.

Gary is a perfectly capable grown man who can fend for himself. But I’m just not that type of mean girl. Making myself an amazing ahi tuna dinner while handing him a can opener and wishing him luck seems a little harsh.

So, I wait for my opportunities.

Gary has plans? Ahi tuna.

Gary is out for the evening? Ahi tuna.

I’m cooking for myself? You can probably guess where this is going.

That’s exactly how I started thinking about this Ahi Tuna Ceviche with Avocado and Cilantro. I already love traditional ceviche, so why not give it the Tracy treatment and swap in one of my favorite ingredients?

It’s fresh, bright, a little spicy, and exactly the kind of thing I’m happy calling dinner when I’m on my own. Of course, it also makes a great appetizer when I’m with people who actually appreciate ahi tuna. No names mentioned.

And because ceviche needs something crispy for scooping—at least in my world—I decided to add toasted egg roll chips. That part was an easy decision.

My Crispy Ahi Tuna Poké Tacos with Avocado Crema already taught me something important. Ahi tuna and crispy egg roll wrappers have a very good thing going. Why interfere with a successful relationship?

The result works equally well as an appetizer or a fresh, light dinner. You get creamy avocado, crisp cucumber, plenty of lime, a little jalapeño and chili crisp. Add those salty, crunchy chips, and every bite has a little bit of everything.

Now I just need Gary to make more plans.

Description

Fresh sushi-grade ahi tuna is marinated in a bright lime mixture, then tossed with creamy avocado, crisp cucumber, jalapeño, and cilantro. Served with golden air-fried egg roll chips, this Ahi Tuna Ceviche is a refreshing appetizer with the perfect balance of citrus, savory flavor, and heat.


Ingredients

6 egg roll wrappers

Avocado oil spray or olive oil spray

Fine sea salt

1 pound sushi-grade ahi tuna, cut into ¼-inch cubes

½ cup fresh lime juice (from about 5 to 6 limes)

2 teaspoons lime zest (from about 1 lime)

1 tablespoon extra-virgin olive oil

½ cup finely diced red onion (from about ½ small red onion)

1 small jalapeño, seeded and finely diced (about 2 tablespoons)

1 small garlic clove, finely grated (about 1 teaspoon)

1 teaspoon low-sodium soy sauce

¾ teaspoon kosher salt

½ teaspoon freshly ground black pepper

½ teaspoon chili crisp oil

1 large avocado, diced (about 1 ½ cups)

1 cup diced English cucumber (from about ½ English cucumber)

¼ cup chopped fresh cilantro

Flaky sea salt, to taste

Additional cilantro leaves, for garnish

Butter lettuce cups, for serving (optional)


Instructions

  1. Cut each egg roll wrapper into 4 triangles.
  2. Lightly spray both sides with oil and arrange the triangles in a single layer in the air fryer basket.
  3. Air fry at 350°F for 3 to 5 minutes, flipping halfway through, until golden brown and crisp.
  4. Immediately season the warm chips with a light sprinkle of fine sea salt. Set aside to cool completely.
  5. Pat the tuna dry with paper towels and cut into ¼-inch cubes.
  6. In a medium glass or ceramic bowl, combine the tuna, lime juice, lime zest, olive oil, red onion, jalapeño, garlic, soy sauce, kosher salt, black pepper, and chili crisp oil. Stir gently to coat.
  7. Cover and refrigerate for 20 to 30 minutes, stirring once halfway through. The tuna should become slightly opaque while remaining tender.
  8. Just before serving, gently fold in the avocado, cucumber, and cilantro.
  9. Taste and adjust with flaky sea salt, if needed.
