Pear & Blue Cheese Salad with Dried Cranberries

Description

Juicy pears, tangy blue cheese, sweet dried cranberries, and tender greens come together in this craveable salad that’s light, elegant, and full of flavor. Add rotisserie chicken or steak to turn it into a full-on lunch or dinner situation.


Ingredients

4 cups butter lettuce or mixed greens

1 pear (Bartlett, Bosc, or Anjou, depending on what's in season)

1 cup rotisserie chicken, shredded

3 tablespoons crumbled blue cheese

1/4 - 1/3 cup, less-sugar dried cranberries


Instructions

  1. Arrange the lettuce or mixed greens in a large salad bowl or divide between two plates.
  2. Wash and dry your pear.  Slice the pear thinly and layer over the greens.
  3. Top with shredded rotisserie chicken.
  4. Sprinkle crumbled blue cheese and dried cranberries evenly over the top.
  5. Drizzle with your favorite vinaigrette or dressing just before serving. Toss gently if desired.

Notes

  1. Mix and match your greens—spring mix, arugula, or romaine all work great.
  2. Use ripe but firm pears so they hold their shape when sliced. A firm, slightly sweet pear gives the best texture.
  3. Rotisserie chicken keeps this salad easy and flavorful, but grilled chicken is a great alternative.
  4. For the blue cheese, feel free to substitute with feta or goat cheese if preferred.
  5. Less-sugar dried cranberries add a sweet-tart pop without overwhelming the other ingredients.
